The Natural Eater: Eating with Good Food Values

> The volume of information available concerning what we should eat and how much we should eat in order to live healthy lives is today so great that most of us cannot keep track of it. The information can often be contradictory and not well suited to individual needs. Comparatively little attention has been given to how we eat. The Slow Food Movement has called some attention to this but its title can sometimes give the impression that these food practices are not for people with busy lives. The movement in favor of mindful eating has also given increased attention to how we eat but focuses only on one dimension of the total picture when it comes to a healthy attitude toward food and eating.

The Natural Eater is my practical approach to developing this healthy attitude which leads naturally to food choices that are good for you as in individual. The approach is based on integrating six good food values into your life:

1. Food as our roots: Connect what you eat with its natural source.

2. & 3. Food as self-awareness and creativity: See fresh ingredients as a creative opportunity and understand basic healthy food preparation techniques. Eat who you are!

4. Food as intimacy: Food is mainly a meal that you share with other people or at least not on the run.

5. Food as solidarity: What you eat affects your planet and its people and, in turn, affects your health.

6. Food serves life: Healthy eating is not a prison, rather a source for joy in good living along with other approaches such as motion, sleep, etc.

The inspirational sources for my recipes are: the food resources provided by my island: nutritious ingredients typically used in Scandinavia but widely available; limitation (time and ingredients) which is the mother of all invention.
